  • 2 1/4 teaspoons baking powder
  • Pinch of salt
  • 1/3 cup dairy-free milk (room temperature)
  • 1/3 cup neutral flavored oil
  • 1 tablespoon lemon juice
  • 6 tablespoons granulated sugar for topping
  • 3/4 cup all-purpose flour for topping
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Prepare the strawberries: In a bowl, mix chopped strawberries with granulated sugar and lemon juice. Set aside for about 10 minutes.
  2. Make the crumb topping: In another bowl, combine flour, sugar, melted vegan butter, and cinnamon until crumbly. Set aside.
  3. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  4. Combine dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
  5. Mix wet ingredients: In a separate bowl, mix dairy-free yogurt, dairy-free milk, oil, lemon juice, and vanilla extract until smooth.
  6. Combine mixtures: Pour wet ingredients into dry ingredients and stir until just combined.
