  • 2 cups cooked chicken, diced
  • 1 (14 oz) can pineapple tidbits, drained
  • 8 oz rotini or bowtie pasta
  • 1 red bell pepper, diced
  • ½ cup shredded carrots (optional)
  • 2 green onions, sliced thin
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ⅓ cup reserved pineapple juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • Salt & pepper, to taste

Instructions

  1. Cook pasta in salted water until tender; rinse under cold water and drain.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, reserved pineapple juice, Dijon mustard, apple cider vinegar, honey, garlic powder, salt & pepper until smooth.
  3. In a large bowl, combine cooled pasta with chicken, pineapple tidbits, red bell pepper, green onions, and shredded carrots.
  4. Drizzle dressing over the mixture and gently fold until well coated.
  5. Cover and refrigerate for at least one hour to meld flavors before serving.
