  • 35g sugar
  • 75g melted unsalted butter
  • 32 oz full-fat cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • 23 tablespoons lemon juice
  • 1 lb strawberries, roughly chopped
  • 55g sugar
  • 1 tsp cornstarch
  • Juice of 1/2 a lemon
  • Fresh strawberries for decoration (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of a springform pan. Bake for 10 minutes until golden and let cool.
  2. Beat room-temperature cream cheese until smooth; gradually add granulated sugar and salt. Incorporate vanilla essence and eggs one at a time, mixing well after each addition. Add heavy cream, sour cream, and cornstarch; mix until combined.
  3. Pour filling over cooled crust; bake at 325°F (160°C) for 60-75 minutes until set but slightly jiggly. Turn off oven; leave cheesecake inside with the door ajar for one hour to cool.
  4. For the strawberry compote, cook chopped strawberries, sugar, cornstarch, and lemon juice over medium heat until thickened. Let cool before topping the cheesecake.
  5. Refrigerate cheesecake for at least 4 hours or overnight before serving.
