  • ¼ cup granulated sugar
  • 6 tbsp melted butter
  • 2 (8 oz) packages softened cream cheese
  • ½ cup granulated sugar
  • ¼ cup sour cream
  • ½ tsp vanilla extract
  • 2 eggs
  • 1 ½ cups fresh strawberries
  • 5 tbsp sugar (for topping)
  • 3 tbsp water
  • 1 tbsp lemon juice
  • 2 tsp cornstarch

Instructions

  1. Preheat your oven to 350°F. Line an 8×8 or 9×9 pan with parchment paper and spray it with baking spray.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of the prepared pan.
  3. In a large bowl, beat together softened cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one by one on low speed until just combined.
  4. Pour the cheesecake filling over the crust and bake for 25-35 minutes until set but slightly jiggly in the center. Allow cooling at room temperature for about 1-2 hours before refrigerating for at least 3-4 hours.
  5. For the topping: combine strawberries, sugar, water, lemon juice, and cornstarch in a saucepan over medium heat until bubbly and thickened. Let cool before spreading over chilled cheesecake bars.
