  • 1/2 cup teriyaki sauce
  • 1 cup pineapple chunks (preferably fresh)
  • 1 cup cooked rice (or quinoa)
  • 4 bell peppers (any color)
  • 2 tablespoons green onions (finely chopped)
  • 2 tablespoons sesame seeds
  • 1/4 cup cilantro (fresh leaves)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off each bell pepper and remove the seeds. Place them upright in a baking dish.
  3. In a mixing bowl, combine diced chicken breast, teriyaki sauce, pineapple chunks, and cooked rice. Mix until well coated.
  4. Stuff each bell pepper with the chicken mixture and gently pack it down.
  5. Cover the baking dish with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until peppers are tender.
  6. Garnish with green onions, sesame seeds, and cilantro before serving.
