  • 2 cucumbers (thinly sliced into half-moons)
  • 2.5 cups strawberries (hulled and quartered for bite-sized pieces)
  • 1/4 red onion (very thinly sliced to prevent overpowering)
  • 3/4 cup feta
  • 1/3 cup mint
  • Pinch red pepper flakes
  • 1/3 cup greek yogurt
  • 3 tbsp apple cider vinegar
  • 1.5 tbsp honey
  • 1.5 tbsp poppy seeds
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil

Instructions

  1. Wash all produce thoroughly. Slice cucumbers into thin half-moons, hull strawberries and quarter them, and thinly slice red onion.
  2. In a large mixing bowl, combine sliced cucumbers, quartered strawberries, red onion, crumbled feta cheese, chopped mint leaves, and a pinch of red pepper flakes; gently toss together.
  3. In a separate bowl, whisk together Greek yogurt, apple cider vinegar, honey, poppy seeds, salt, black pepper, and olive oil until smooth.
  4. Pour the dressing over the salad mixture and toss gently until well coated.
  5. Serve immediately or chill for better flavor integration.
