  • 1 head cauliflower (rinsed, core and bottom leaves removed)
  • 2 tablespoons water
  • 1/2 cup mayonnaise
  • 1 teaspoon finely chopped onion
  • 1 teaspoon mustard
  • 3 slices American cheese (or 1/2 cup grated cheddar cheese)

Instructions

  1. Place the rinsed cauliflower in a microwavable casserole dish with 2 tablespoons of water. Cover with a lid.
  2. Microwave on high for 8-9 minutes until tender-crisp. Check doneness and add extra time if needed.
  3. In a mixing bowl, combine mayonnaise, onion, and mustard to create a smooth sauce.
  4. Spoon the sauce over the cooked cauliflower and top with cheese slices.
  5. Microwave again for 1-2 minutes until heated through and cheese is melted. Let it rest for two minutes before serving.
