Ingredients

Scale
  • 23 pounds boneless skinless chicken breasts
  • 1 cup sweet chili sauce
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup apple cider vinegar
  • 3 tablespoons corn oil
  • 1/4 cup lime juice
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • Salt and black pepper to taste

Instructions

  1. In a mixing bowl, whisk together the sweet chili sauce, soy sauce, apple cider vinegar, corn oil, lime juice, minced garlic, minced ginger, salt, and black pepper.
  2. Place the chicken breasts in a large bowl or resealable bag and pour the marinade over them. Ensure each piece is well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Heat a skillet over medium-high heat. Remove the chicken from the marinade (reserve it) and cook for about 5 minutes on each side until golden brown and cooked through.
  4. For enhanced flavor, add the reserved marinade during cooking if desired.
  5. Let the chicken rest briefly before slicing into strips and serving over rice or with your favorite vegetables.
