  • 8 ounces block-style cream cheese (softened)
  • 3/4 cup confectioner’s sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1.5 cups heavy cream (very cold)
  • 12 graham crackers
  • 16 ounces strawberries (thinly sliced)
  • 11 ounces blueberries

Instructions

  1. In a mixing bowl, beat softened cream cheese until smooth. Add confectioner’s sugar, vanilla extract, and kosher salt; mix until combined.
  2. In a separate bowl, whip very cold heavy cream until medium peaks form. Fold into the cream cheese mixture gently.
  3. In an 8×8 or 9×9 pan, spread a thin layer of whipped cream at the bottom. Layer graham crackers, followed by one-third of the whipped cream mixture and sliced strawberries.
  4. Repeat the layering process two more times: graham crackers, whipped cream mixture, blueberries; finish with both strawberries and blueberries on top.
  5. Cover and refrigerate for at least 1 hour before serving.
