  • 4 cups fresh strawberries
  • ½ cup water
  • ¾ cup granulated sugar
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • 260 g ladyfingers
  • Freeze-dried strawberries (for dusting)

Instructions

  1. Prepare the strawberry syrup by cooking strawberries, water, sugar, and lemon juice until thickened, then cool.
  2. In a mixing bowl, whisk together mascarpone, sugar, and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks and fold into mascarpone mixture with cooled syrup.
  3. Dip ladyfingers in the syrup briefly and arrange them in your serving dish. Layer half of the mascarpone filling over the ladyfingers.
  4. Repeat with another layer of dipped ladyfingers and finish with the remaining filling. Refrigerate for at least six hours or overnight.
  5. Dust with freeze-dried strawberry powder before serving.
