  • 9-inch baked tart crust
  • 1 pint fresh strawberries
  • 2 tablespoons strawberry or apricot jam

Instructions

  1. Prepare the vanilla milk mixture by combining vanilla seeds with sugar and heating with milk in a saucepan.
  2. In a stand mixer, whisk egg yolks and gradually add remaining sugar until light.
  3. Mix cornstarch into additional milk until smooth, then combine with the egg yolk mixture and hot milk.
  4. Cook the mixture over low heat until thickened, whisking constantly.
  5. Stir in butter, cool, and refrigerate the pastry cream.
  6. Assemble by spreading pastry cream over the cooled tart crust and layering sliced strawberries on top.
  7. Brush with warmed jam for glaze and chill before serving.
