  • 3/4 cup plain Greek yogurt

  • A pinch of salt (for streusel)
  • 1/4 cup flour (for streusel)
  • 2 1/2 tablespoons warm melted butter (for streusel)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a muffin pan by greasing it or lining it with paper cups.
  2. In a small bowl, mix together the streusel topping ingredients: sugars, flour, salt, and melted butter until crumbly.
  3. In a saucepan over medium heat, combine sliced strawberries with sugar; cook until thickened and set aside to cool.
  4. In a large mixing bowl, whisk together flour, baking powder, and salt; set aside.
  5. In another bowl, whisk eggs with remaining sugar until thickened. Gradually add in melted butter and oil while whisking. Mix in Greek yogurt, milk, and vanilla until smooth.
  6. Fold the wet mixture into the dry ingredients gently; then carefully add remaining sliced strawberries.
  7. Fill muffin cups with batter, add strawberry filling using a chopstick if needed, then top with streusel mixture.
  8. Bake for about 17 minutes or until a toothpick comes out clean with some crumbs attached. Cool in the pan for five minutes before transferring to a cooling rack.
