  • 2 cups freeze-dried strawberries (plus extra for topping)
  • ½ cup unsalted butter
  • 20 oz mini vegan marshmallows (divided)
  • 2 teaspoons vanilla extract
  • ¼ teaspoon kosher salt
  • 6 cups rice cereal

Instructions

  1. Grease a 9” x 9” baking pan with cooking spray and set aside. Crush freeze-dried strawberries.
  2. In a large pot, melt the butter over medium-low heat. Once melted, turn off the heat and add 16 oz of mini vegan marshmallows. Stir until fully melted.
  3. Add crushed strawberries, vanilla extract, and kosher salt to the melted mixture; mix well.
  4. Incorporate rice cereal into the mixture until evenly coated, then stir in the remaining 4 oz of marshmallows.
  5. Pour the mixture into the prepared pan, spreading evenly while pressing lightly to form treats. Top with additional strawberries.
  6. Let cool completely before cutting into squares.
