  • 4 cups lemon juice (bottled, fresh, or a combination)
  • 6 cups granulated sugar

Instructions

  1. Prepare your water bath canner and sterilize pint jars by placing them in simmering water.
  2. Puree strawberries in a food processor until smooth and transfer to a large saucepan.
  3. Add lemon juice and sugar to the puree; stir well and heat over medium until it reaches 190-200°F without boiling.
  4. Fill hot jars with the mixture, leaving 1/4 inch of headspace; secure lids tightly.
  5. Process jars in boiling water for 15 minutes. Allow to cool undisturbed for 12-24 hours before checking seals.
