  • 2 cups freeze-dried strawberries
  • 20 Golden Oreo cookies
  • 12 tbsp unsalted butter (divided)
  • 1 (16 oz) bag mini vegan marshmallows
  • 1 tsp pure vanilla extract
  • 6 cups crispy rice cereal
  • Optional: Granulated sugar and a pinch of salt

Instructions

  1. Preheat oven to 275°F (135°C). In a food processor, pulse freeze-dried strawberries into a fine powder. Crush Golden Oreos into fine crumbs.
  2. Combine strawberry powder, Oreo crumbs, 6 tbsp melted butter, optional sugar, and a pinch of salt in a mixing bowl until coated.
  3. Spread mixture on a parchment-lined baking sheet and bake for 10-15 minutes. Let cool.
  4. Line a 9×13 inch pan with parchment paper. In a large pot over low heat, melt remaining butter and mini marshmallows until smooth.
  5. Stir in vanilla extract and salt. Gently fold in crispy rice cereal until evenly coated.
  6. Press mixture into the prepared pan and top with cooled Strawberry Crunch topping. Allow to set for at least one hour before cutting into squares.
