  • 1 large whole egg, at room temperature
  • 2/3 cup whole milk, at room temperature
  • 3-ounce package strawberry flavored vegan gelatin powder
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup unsalted butter, softened for frosting
  • 1/4 cup heavy cream (or whole milk)
  • 2 teaspoons pure vanilla extract
  • 1/8 teaspoon fine sea salt
  • 4 cups confectioners' sugar, sifted
  • 12 Golden sandwich cookies (like Golden Oreos), cream filling removed
  • 1 cup freeze-dried strawberries, lightly crushed
  • 4 tablespoons unsalted butter, melted and cooled

Instructions

  1. Preheat the oven to 350°F (175°C) and grease 9-inch round baking pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add egg whites and whole egg, mixing well until combined. Stir in whole milk, strawberry vegan gelatin powder, and vanilla extract.
  3. In another bowl, whisk together sifted flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Pour the batter evenly into prepared baking pans and bake for about 25 minutes or until a toothpick inserted comes out clean. Allow cooling in pans for about 10 minutes before transferring to wire racks.
  5. In a separate bowl, beat softened butter until creamy. Add heavy cream (or milk), vanilla extract, salt, and gradually mix in confectioners' sugar until smooth.
  6. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous layer of frosting on top, then place the second cake layer on top and repeat frosting on the top layer. Crush Golden Oreos and sprinkle over the frosting along with freeze-dried strawberries.
