  • 2 cup all-purpose flour
  • 1 ¼ cup fresh strawberries
  • ½ cup milk
  • ½ cup vegetable oil
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 tbsp flour (for tossing strawberries)
  • ⅓ cup all-purpose flour (for crumb topping)
  • 3 tbsp granulated sugar (for crumb topping)
  • 3 tbsp unsalted butter (for crumb topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin.
  2. In a bowl, beat together cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth. Set aside.
  3. In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, mix eggs, milk, vegetable oil, and vanilla extract until smooth.
  5. Combine wet and dry ingredients gently; fold in floured strawberries.
  6. Fill muffin cups halfway with batter, add cream cheese filling, then top with remaining batter.
  7. Bake for 18–22 minutes until golden brown; cool slightly before serving.
