Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch cast iron skillet or baking dish.
  2. In a bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
  3. In another bowl, combine buttermilk, honey, eggs, and melted butter until smooth.
  4. Mix wet ingredients into dry ingredients until just combined. Gently fold in chopped jalapeños.
  5. Pour batter into prepared skillet and garnish with sliced jalapeños.
  6. Bake for 25–30 minutes or until golden brown and toothpick comes out clean.
  7. While baking, whisk together lime juice, zest, and powdered sugar for the drizzle.
  8. Cool cornbread slightly before drizzling with lime glaze.
