  • 1 tablespoon (14 grams) cooled melted butter or neutral oil

  • 4 ¼ cups (540 grams) all-purpose flour
  • 6 cups water
  • 1/4 cup baking soda
  • 1 large egg
  • 1 tablespoon water
  • Pretzel salt or coarse sea salt

Instructions

  1. In a large mixing bowl, combine warm water, instant yeast, and light brown sugar. Let it sit until foamy (about 5 minutes).
  2. Stir in cooled melted butter or oil and sea salt. Gradually mix in all-purpose flour until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Cover with a damp cloth and let rise for 1 hour.
  4. Preheat oven to 425°F (220°C). Punch down the risen dough and divide it into about 80 small pieces; roll each into a ball.
  5. Boil 6 cups of water in a saucepan and whisk in baking soda. Dip each pretzel bite into the boiling bath for 30 seconds; place on parchment-lined baking sheets.
  6. Whisk one egg with water for an egg wash, brush over pretzel bites, sprinkle with salt, then bake for 12-15 minutes until golden.
