Instructions

  1. Prepare the pineapple by slicing off the top and bottom to create flat surfaces. Stand it upright and carefully remove the skin.
  2. In a bowl, mix brown sugar and cinnamon. Rub this mixture over the outside of the pineapple.
  3. Preheat your grill to medium heat (for gas) or prepare charcoal until glowing red (for charcoal grills). Add wood chips for smoke.
  4. Place the seasoned pineapple on the grill grates away from direct heat. Close the lid and smoke for 45 minutes to 1 hour, basting occasionally with fruit juice to keep it moist.
