  • 1/2 cup fresh orange juice
  • 1/3 cup fresh lime juice
  • 1/4 cup soy sauce
  • 3 tablespoons apple cider vinegar
  • 4 garlic cloves (minced)
  • 23 pounds skirt steak
  • Salt and pepper to taste
  • 1 cup fresh parsley
  • 1 cup fresh cilantro
  • 1/41/3 cup olive oil (for chimichurri)
  • 1/2 medium onion (diced)
  • 3 garlic cloves (for chimichurri)
  • 3 tablespoons fresh lime juice (for chimichurri)
  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon salt (for chimichurri)
  • 1/2 teaspoon pepper (for chimichurri)
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. In a mixing bowl, whisk together olive oil, orange juice, lime juice, soy sauce, minced garlic, apple cider vinegar, salt, and pepper until well combined.
  2. Place the skirt steak in a large resealable bag or shallow dish. Pour the marinade over the steak, ensuring it’s fully coated. Seal the bag or cover the dish and refrigerate for at least 6 hours or overnight.
  3. While your steak marinates, prepare your chimichurri sauce. In another mixing bowl, combine parsley, cilantro, olive oil, diced onion, minced garlic, lime juice, red apple vinegar, salt, pepper, and optional red pepper flakes. Stir well to combine all ingredients.
  4. Preheat your grill over medium-high heat. Remove skirt steak from marinade and discard excess marinade. Grill for about 5 minutes per side for medium rare or until desired doneness is reached.
  5. Once cooked to your liking, remove from grill and let rest for a few minutes before slicing against the grain. Serve topped with chimichurri sauce.
