  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb large shrimp, peeled and deveined
  • 1 cup shredded sharp white cheddar cheese
  • Garlic
  • Smoked paprika
  • Cajun seasoning
  • 4 tbsp unsalted butter
  • Salt to taste
  • Black pepper to taste
  • Olive oil
  • 1 tbsp lemon juice
  • Pinch cayenne or red pepper flakes (Optional)
  • Chopped parsley or green onions (Optional garnish)

Instructions

  1. In a large pot, bring chicken broth to a boil. Gradually stir in stone-ground grits and reduce heat to low; simmer for 20 minutes until thickened. Mix in heavy cream, butter, cheddar cheese, salt, and pepper.
  2. Season shrimp with salt, pepper, smoked paprika, and Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook shrimp for 2-3 minutes on each side until pink.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth, heavy cream, lemon juice, and optional cayenne; simmer.
  4. Fold cooked shrimp into the grits mixture until warmed through.
  5. Serve warm garnished with parsley or green onions if desired.
