  • 8 cloves garlic, chopped
  • 1 tablespoon onion powder
  • 1 tablespoon sweet/smoked paprika
  • 1 tablespoon ground cumin

  • 2 teaspoons chili powder
  • 1/2 teaspoon cayenne
  • 2 tablespoons lemon zest
  • Salt and chili flakes (pink Himalayan salt)
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup feta cheese
  • 1 cup tzatziki sauce
  • 6 fresh pitas or naan, warmed
  • Lettuce, pickled red onion, and pepperoncini (or anything pickled), for serving

Instructions

  1. Preheat oven to 475°F. Line a baking sheet with parchment paper.
  2. Toss steak with garlic, spices, lemon zest, and olive oil on the baking sheet. Marinate for 20-30 minutes if time allows.
  3. Bake the steak for about 10 minutes, then broil for an additional 2-5 minutes until crispy. Let rest for 10 minutes before slicing.
  4. Mix crumbled feta into the tzatziki sauce and set aside.
  5. Assemble gyros by stuffing warm pitas with sliced steak and desired toppings.
