  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 3 cups shredded mozzarella cheese
  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops, chopped
  • 1 cup lump crab meat
  • 2 cups fresh spinach, chopped
  • 3 cups marinara sauce
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles in boiling salted water until al dente; drain and cool.
  3. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add shrimp and scallops; cook until opaque. Stir in crab meat and spinach until wilted. Season with oregano, basil, salt, and pepper.
  4. In a mixing bowl, combine ricotta cheese, Parmesan cheese, and half of the mozzarella until creamy.
  5. In a baking dish, layer marinara sauce on the bottom followed by noodles, ricotta mixture, and seafood filling; repeat the layers ending with noodles topped with remaining marinara and mozzarella.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until golden brown.
  7. Allow resting before slicing; garnish with parsley.
