  • 1 box (3.4 oz) instant pistachio pudding mix
  • 6 tablespoons cold unsalted butter, diced
  • 1/4 teaspoon vanilla extract
  • 1 large egg
  • Chocolate chips or chunks (up to 1/2 cup)
  • 2/3 cup heavy cream plus more as needed
  • Coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, salt, and pistachio pudding mix.
  3. Add cold diced butter to the mixture and blend until coarse.
  4. Make a well in the center; add vanilla extract, egg, and half of the cream. Stir until combined and add more cream as needed.
  5. Divide dough and shape each half into a rectangle; fold in chocolate before cutting into triangles.
  6. Place on the baking sheet, brush with cream, sprinkle with coarse sugar, and bake for 13-15 minutes until golden.
