  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup smooth peanut butter
  • 3/4 cup seedless strawberry jam

Instructions

  1. Preheat your oven to 200C (400F). Line a muffin pan with cases.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, whisk eggs and sugar until light. Add buttermilk, oil, vanilla extract, and peanut butter; mix well.
  4. Gradually fold dry ingredients into the wet mixture until just combined.
  5. Fill muffin cases halfway with batter, add jam in the center, then top off with more batter.
  6. Swirl additional jam atop each muffin using a knife.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5-10 minutes before transferring to a wire rack.
