  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups diced peaches (fresh or canned)
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin or line it with paper liners.
  2. In a large bowl, mix the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine the melted butter, milk, vanilla extract, and diced peaches.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  5. In a small bowl, mix brown sugar, oats, and cinnamon for the streusel topping.
  6. Spoon the muffin batter into each muffin cup until two-thirds full and sprinkle generously with streusel.
  7. Bake for 25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool for about 5 minutes before transferring them to a wire rack.
