  • 2 cups all-purpose flour
  • 1 tbsp cocoa powder
  • 1 large egg
  • ½ cup buttermilk
  • 1 cup light brown sugar
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup powdered sugar
  • 1 cup vegan marshmallows fluff
  • ½ cup butter (softened)
  • ½ tsp vanilla extract
  • Gel food colors (blue & red)

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Cream together butter and light brown sugar until fluffy.
  3. Mix in egg, vanilla extract, and buttermilk until combined.
  4. Sift together flour, cocoa powder, baking powder, and salt in a separate bowl.
  5. Gradually mix dry ingredients into wet mixture until just combined.
  6. Divide batter into two bowls; color one red and the other blue using gel food colors.
  7. Chill both batters for 10 minutes.
  8. Scoop onto lined baking tray and flatten slightly.
  9. Bake for 8-10 minutes; let cool completely.
  10. Prepare filling by whisking softened butter, vegan marshmallow fluff, powdered sugar, and vanilla extract.
  11. Assemble by piping filling between one red and one blue cookie.
