  • 1 pound ground chicken, beef, or turkey
  • 1 yellow onion, chopped
  • 12 jalapeños, seeded and chopped
  • 2 cloves garlic, minced
  • 2 ½ cups red enchilada sauce
  • 1 cup dry long grain rice
  • 2 cups tortilla chips
  • 12 cups shredded Mexican cheese

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large oven-safe skillet, heat olive oil over high heat. Add ground meat and onion; cook until browned (about 5 minutes).
  3. Stir in jalapeños, garlic, smoked paprika, cumin, and salt; cook for another minute.
  4. Add red enchilada sauce and water; bring to a boil. Stir in rice and reduce heat to low; cover and cook until liquid absorbs (about 15 minutes).
  5. Stir in cilantro and lime juice; top with cheese and gently press tortilla chips into the cheese.
  6. Bake for about 10 minutes or until the cheese is melted.
