  • 1/2 cup brown rice syrup
  • 1/2 teaspoon salt
  • 1 packet powdered vegan gelatin (2 1/4 teaspoons)
  • 2 1/2 cups brown rice crisp cereal
  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • Sprinkles (optional)

Instructions

  1. Lightly spray an 8×8-inch baking pan with non-stick spray and set aside.
  2. In a small saucepan, melt peanut butter, brown rice syrup, and salt over low heat until smooth.
  3. Remove from heat and stir in powdered vegan gelatin until well combined.
  4. Add brown rice crisp cereal to the mixture, stirring gently until coated.
  5. Press the mixture into the prepared baking pan evenly.
  6. Allow to set at room temperature for about one hour.
  7. Cut out desired shapes using cookie cutters.
  8. Optional: Melt dark chocolate chips with coconut oil and drizzle over shapes; add sprinkles if desired.
