  • 1 lb chicken breast, sliced
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small zucchini, sliced
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup kalamata olives, pitted
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the chicken slices with salt, black pepper, paprika, and dried oregano.
  2. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until golden brown (about 5-7 minutes). Remove from skillet.
  3. In the same skillet, add red bell pepper, yellow bell pepper, zucchini, red onion, and minced garlic. Sauté for about 4-5 minutes until tender-crisp.
  4. Add halved cherry tomatoes and kalamata olives; cook for an additional 3-4 minutes until tomatoes soften.
  5. Return cooked chicken to the skillet and toss everything together.
  6. Drizzle lemon juice over the stir fry and sprinkle with fresh parsley before serving.
