Ingredients

  • Ready-rolled shortcrust pastry
  • Fresh lemons (juice and zest)
  • Caster sugar
  • Eggs
  • Unsalted butter
  • Icing sugar (for dusting)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Roll out the shortcrust pastry on a floured surface until about 3mm thick. Cut circles slightly larger than your tartlet tins and press them into the tins.
  3. Blind bake the pastry shells lined with parchment paper and filled with baking beans for about 10 minutes until lightly golden. Cool slightly before removing the parchment.
  4. In a mixing bowl, whisk together lemon juice, zest, caster sugar, and eggs until smooth. Melt butter in a saucepan over low heat and gradually stir in the lemon mixture until thickened.
  5. Fill each cooled pastry shell with lemon curd and bake for an additional 5-7 minutes until set.
  6. Allow to cool completely at room temperature before dusting with icing sugar and serving.
