  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 cup sour cream or plain Greek yogurt
  • 2 large eggs (room temperature)
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1½ cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5 loaf pan with parchment paper.
  2. In one bowl, whisk together the flour, baking powder, and salt. In another bowl, mix the vegetable oil, sugar, sour cream (or yogurt), eggs, lemon juice, lemon zest, and vanilla until smooth.
  3. Gently combine the wet and dry mixtures until just incorporated; some lumps are fine.
  4. Toss blueberries with flour and fold them into the batter carefully.
  5. Pour the mixture into the prepared loaf pan and bake for 55–65 minutes or until a toothpick comes out clean.
  6. Allow to cool for about 15 minutes, then prepare the glaze by mixing powdered sugar with lemon juice and pour over the warm bread.
