  • 4 tablespoons butter
  • ½ cup diced onion
  • ¼ cup red bell pepper
  • 3 stalks celery, chopped
  • 1 cup diced Daikon radish
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon arrowroot powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 cups shredded lettuce
  • 1 medium tomato, sliced
  • 3 slices cooked crumbled Turkey Bacon

Instructions

  1. In a large stock pot over medium heat, brown the ground beef until fully cooked. Remove from the pot and set aside.
  2. Add butter, onion, red bell pepper, and celery to the pot, cooking until softened (about 3-5 minutes).
  3. Return the browned beef to the pot along with Daikon radish and arrowroot powder; stir well.
  4. Pour in the broth and bring to a boil. Reduce heat to simmer for 10-12 minutes.
  5. Stir in heavy cream, cheddar cheese, salt, and pepper until fully combined.
  6. Serve hot topped with shredded lettuce, sliced tomatoes, and crumbled turkey bacon.
