  • 1 1/2 lbs chicken breasts (cut into 1 1/4” cubes)
  • 3 bell peppers (sliced into 1 1/4” chunks)
  • 2 zucchinis (cut into 1/2” slices)
  • 1 large red onion (cut into 1 1/4” chunks)
  • 1/3 cup olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons reduced sodium soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 1/2 tsps. onion powder
  • 1 1/2 tsps. garlic powder
  • 1 1/2 tsps. salt
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp red pepper flakes
  • 1 cup Greek yogurt
  • 1/4 cup finely freshly grated Parmesan
  • 1 tablespoon lemon juice (for dip)
  • 2 tablespoons minced parsley
  • 1 tablespoon chopped chives (optional)
  • 1 tablespoon minced dill (optional)
  • 1/4 tsp salt (for dip)
  • 1/4 tsp ground cumin (for dip)
  • 1/8 teaspoon pepper (for dip)

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, soy sauce, balsamic vinegar, brown sugar, Dijon mustard, onion powder, garlic powder, salt, and spices until well combined.
  2. Add chicken cubes to the marinade; cover and refrigerate for at least 30 minutes or up to overnight.
  3. Thread marinated chicken and vegetables onto skewers.
  4. Grill on medium-high heat for about 10–15 minutes or broil in the oven for approximately 12–15 minutes until cooked through.
  5. Serve with a yogurt dip made by mixing Greek yogurt with Parmesan cheese and herbs.
