  • 2 pounds boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 4 yellow peaches (quartered, then halved)
  • 3 medium jalapeno peppers (halved, seeded, cut into chunks)
  • ½ cup peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic (minced)
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Instructions

  1. Marinate chicken cubes with kosher salt, black pepper, chili powder, and olive oil for at least 15 minutes.
  2. Assemble skewers by alternating marinated chicken, peach pieces, and jalapeno chunks.
  3. Mix peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes in a bowl to create the glaze.
  4. Cook skewers in a preheated air fryer at 380°F (190°C) for about 11 minutes.
  5. Brush with glaze during the last few minutes of cooking for added flavor.
