  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced

  • 1 tbsp dried oregano
  • 1 large egg
  • Olive oil for cooking
  • 1 cup plain Greek yogurt
  • 1/2 medium cucumber, grated and drained
  • 1 clove garlic, minced for Tzatziki Sauce
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, onion, garlic, parsley, oregano, salt, pepper, and egg. Mix until just combined.
  3. Shape the mixture into meatballs about 1 to 1.5 inches in diameter and place them on the baking sheet.
  4. Drizzle olive oil over the meatballs for a golden finish.
  5. Bake for 20-25 minutes or until golden brown and cooked through.
  6. While baking, whisk together Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper for the Tzatziki sauce.
  7. Serve warm meatballs with Tzatziki sauce.
