  • 8 cups water
  • 1 tablespoon olive oil
  • 1/4 cup unsalted butter (divided)
  • 1 small onion (minced)
  • 2 cloves garlic (minced)
  • 2 teaspoons salt
  • 1 teaspoon brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon chipotle chili powder
  • 2 cups shredded cheese (Monterey Jack or Queso Panela)
  • 1 tablespoon lime juice
  • Chopped cilantro (for garnish)

Instructions

  1. Add rinsed pinto beans to the Instant Pot with water and olive oil.
  2. Secure the lid and pressure cook on high for 40 minutes. Allow natural pressure release for an additional 20 minutes.
  3. Reserve about 1.5 cups of cooking liquid before draining the beans.
  4. In a cast iron skillet, melt 2 tablespoons of butter over medium-high heat and sauté minced onion until softened.
  5. Stir in garlic, salt, brown sugar, cumin, and chipotle powder; cook until fragrant.
  6. Add cooked beans and one cup reserved liquid, simmering on medium-low to combine flavors.
  7. Mash the beans to your desired texture using a potato masher; add more reserved liquid if needed.
  8. Mix in lime juice, one cup of cheese, and remaining butter until well combined; top with another cup of cheese.
  9. Broil under high heat for about 1–3 minutes until cheese is melted and bubbly; garnish with cilantro.
