1 pound mushrooms
1 tablespoon extra virgin olive oil
1 teaspoon salt
⅛ teaspoon black pepper
1 clove garlic, grated
1 heaping cup hummus
2 tablespoons chopped parsley
Instructions
Boil a large pot of salted water and cook the pasta until al dente, reserving two cups of pasta water before draining.
In a skillet, heat olive oil over medium-high heat. Add sliced mushrooms, grated garlic, salt, and pepper; sauté until browned (12-15 minutes).
Stir in the hummus and one cup of reserved pasta water into the skillet with mushrooms, cooking on low heat until creamy.
