  • 12 ounces rigatoni or your preferred pasta
  • 1 pound mushrooms
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 clove garlic, grated
  • 1 heaping cup hummus
  • 2 tablespoons chopped parsley

Instructions

  1. Boil a large pot of salted water and cook the pasta until al dente, reserving two cups of pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat. Add sliced mushrooms, grated garlic, salt, and pepper; sauté until browned (12-15 minutes).
  3. Stir in the hummus and one cup of reserved pasta water into the skillet with mushrooms, cooking on low heat until creamy.
  4. Combine cooked pasta with the sauce in the skillet, adjusting consistency with additional pasta water if needed. Serve topped with cracked pepper and parsley.
