  • 1/2 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 large Eggs, room temperature
  • 1/4 cup Honey
  • 1/2 cup Whole milk or dairy-free alternative
  • 1 teaspoon Vanilla extract
  • 2 cups Fresh peaches, diced
  • 8 ounces Cream cheese, softened
  • 1/4 cup Granulated sugar
  • 1 large Egg yolk
  • 1 teaspoon Vanilla extract
  • 1 cup Peach slices for garnish
  • 1 tablespoon Honey drizzle
  • 1/2 cup Crushed graham crackers

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, mix flour, baking powder, and salt. In another bowl, cream softened butter with sugar until fluffy; add eggs, honey, milk, and vanilla; mix well. Gradually combine wet and dry ingredients and fold in diced peaches.
  3. Fill muffin tins about two-thirds full and bake for 22 minutes or until a toothpick comes out clean. Let cool before filling.
  4. For the cream cheese filling, beat softened cream cheese with sugar, then add egg yolk and vanilla; mix until smooth.
  5. Once cooled, make small holes in each cupcake and fill generously with the cream cheese mixture. Top with peach slices, drizzle honey over them, and finish with crushed graham crackers.
