  • 2 and 3/4 cups all-purpose flour, spooned & leveled or weighed out
  • 1/4 cup + 2 tbsp granulated sugar
  • 4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 3/4 cup salted butter, cubed & cold
  • 1 cup cold buttermilk + 12 tsp extra, as needed
  • 1 and 1/4 cups cold heavy cream
  • 3 tbsp powdered sugar
  • 1 tbsp vanilla extract or vanilla bean paste

Instructions

  1. Prep the Strawberries: Combine quartered strawberries and sugar in a bowl; refrigerate to allow juices to release.
  2. Make the Biscuits: Whisk together the dry ingredients, cut in cold butter until crumbly, then add buttermilk to form dough. Fold and roll out before cutting into rounds.
  3. Bake: Chill cut biscuits, place on greased baking sheet, brush tops with heavy cream, sprinkle sugar, and bake until golden.
  4. Whip the Cream: Beat chilled heavy cream with powdered sugar and vanilla until stiff peaks form.
