  • 8 large organic lemons
  • 750 milliliters high-proof white grape juice
  • 2 ½ cups white sugar
  • 4 ½ cups water
  • ⅓ cup white sugar for final adjustments
  • 1 cup water for final adjustments

Instructions

  1. Carefully peel the yellow zest from the lemons using a vegetable peeler, avoiding the white pith.
  2. Place lemon peels into a glass jar, add the high-proof white grape juice, seal tightly, and allow to infuse for at least 7 days (preferably up to 3 weeks) in a cool, dark place.
  3. In a saucepan, combine sugar and water over medium heat, stirring until dissolved. Allow to cool completely.
  4. Once infused, strain the lemon-infused liquid into a large container. Gradually stir in the cooled sugar syrup to taste, adjusting sweetness as desired.
  5. Transfer limoncello into glass bottles and refrigerate or freeze until ready to serve.
