  • Double crust pie dough (chilled overnight)
  • 4 cups blueberries (fresh or frozen)
  • 2 cups wild blueberries (fresh or frozen)
  • 3/4 cup granulated sugar
  • 5 tablespoons cornstarch
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon fine sea salt
  • 1 tablespoon unsalted butter (diced)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large mixing bowl, combine blueberries, sugar, cornstarch, lemon zest, lemon juice, cinnamon, nutmeg, and salt; gently toss until well coated.
  3. Roll out half of the chilled pie dough on a floured surface and fit it into a pie pan.
  4. Pour blueberry filling into the crust and dot with diced butter.
  5. Roll out the second half of the dough and cover the filling; seal edges by crimping.
  6. Brush crust with egg yolk mixed with cream and sprinkle turbinado sugar on top.
  7. Bake for 20 minutes at 425°F (220°C), then reduce temperature to 350°F (175°C) and bake for another 50–60 minutes until bubbly and golden.
  8. Allow cooling before slicing.
