  • 1/4 cup agave nectar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 large ripe bananas (mashed)
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 6 ounces vanilla Greek yogurt
  • 1/2 cup mini semi-sweet chocolate morsels

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cupcake tin.
  2. In a large mixing bowl, beat together honey, agave nectar, egg, vanilla extract, and mashed bananas until well combined.
  3. Add in both types of flour, baking powder, baking soda, salt, and yogurt. Mix until just combined.
  4. Gently fold in the mini chocolate morsels.
  5. Spoon approximately 1/4 cup of batter into each muffin cup.
  6. Bake for about 18-20 minutes or until a toothpick inserted comes out clean.
