  • 1 cup Guava Nectar or Guava Juice
  • 3 large Eggs (room temperature)
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese (room temperature)
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 2 1/2 cups Guava Nectar or Guava Juice (for the glaze)
  • 1/2 cup Granulated Sugar (for glaze)
  • 2 tbsp Cornstarch
  • 1/4 cup Water (for slurry)
  • 8 oz Cool Whip (thawed)
  • 1 cup Sweetened Coconut Flakes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the strawberry cake mix, guava nectar, eggs, coconut oil, cream cheese, granulated sugar, and vanilla extract. Mix until smooth.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for approximately 30 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool completely before pouring the glaze made from guava nectar and cornstarch over the top.
  5. Finish by topping with Cool Whip and sweetened coconut flakes.
