  • 4 chicken breasts or 8 chicken breast tenderloins
  • 1 (6-ounce) can pineapple juice
  • ¾ cup teriyaki sauce
  • ½ cup sliced onions
  • 1 tablespoon minced ginger
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • Garnish: finely chopped cilantro

Instructions

  1. In a large bowl, combine all marinade ingredients. Mix well to coat the chicken.
  2. Marinate the chicken in the refrigerator for at least 2 hours, preferably overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove chicken from marinade and reserve any remaining marinade for basting.
  5. Grill chicken for about 3 minutes on one side. Baste with reserved marinade, flip, and grill for another 5-7 minutes until fully cooked.
  6. Serve hot, garnished with cilantro, alongside rice or your favorite salsa.
