  • 2 pounds beef (cut into 1-inch cubes)
  • 1/4 cup olive oil
  • 8 cloves garlic (minced)
  • 1 tablespoon low-sodium soy sauce
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 large red bell pepper (cut into 1-inch pieces)
  • 1 large red onion (cut into 1-inch pieces)

Instructions

  1. In a mason jar, combine olive oil, minced garlic, soy sauce, thyme, salt, and black pepper. Shake well.
  2. Add beef cubes to a bowl and pour the marinade over them. Toss to coat well. Cover and refrigerate for at least two hours.
  3. Assemble skewers by alternating pieces of beef, bell peppers, and onions.
  4. Preheat your grill to 400°F. Grill skewers for 2-3 minutes per side until cooked to medium doneness (145°F internal temperature).
