  • 12 lasagna noodles
  • 2 cups cooked shredded chicken
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1/2 sweet onion (diced)
  • 14 ounces diced canned tomatoes (drained)
  • 1 cup roasted green chile peppers (chopped)
  • 15 ounces ricotta cheese (drained)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup crumbled Cotija cheese
  • 2 eggs (lightly beaten)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large saucepan, melt butter and whisk in flour until golden. Gradually add chicken broth, stirring constantly until thickened. Mix in diced tomatoes and roasted green chiles.
  3. Stir in cooked chicken and heat through.
  4. In a bowl, mix ricotta cheese with beaten eggs and both cheddar and mozzarella cheeses until smooth.
  5. In a greased lasagna pan, layer sauce, noodles, and cheese mixture three times, finishing with the remaining cheese mixture on top.
  6. Sprinkle Cotija cheese over the top and cover with foil.
  7. Bake for 45 minutes; uncover and bake an additional 15–20 minutes until bubbly.
  8. Let rest for 10 minutes before serving.
