  • 1/4 cup Italian breadcrumbs
  • 1/4 cup fresh parsley (finely chopped)
  • 1/4 cup onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper (freshly ground)
  • 1 cup plain Greek yogurt (2%)
  • 1/2 cup cucumber (grated and drained)
  • 2 cloves garlic (minced)
  • 2 Tbsp lemon juice (fresh squeezed)
  • 2 Tbsp fresh dill (finely chopped)
  • 1 Tbsp extra virgin olive oil
  • salt and pepper (to taste)
  • 1 1/2 cups cucumber (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup Kalamata olives (sliced lengthwise)
  • 1/2 cup feta cheese (fat-free, crumbled)
  • 1/2 Tbsp olive oil (extra virgin)
  • 1 Tbsp lemon juice (fresh)
  • 1/2 Tbsp balsamic vinegar

  • 2 cups cooked brown rice
  • 4 cups romaine lettuce (chopped)

Instructions

  1. In a mixing bowl, combine ground chicken, breadcrumbs, parsley, onion, garlic, oregano, cumin, salt, and pepper. Mix gently.
  2. Form the mixture into small meatballs about 1 inch in diameter and place them on a baking sheet or air fryer basket.
  3. Cook in a preheated oven at 400°F for 20 minutes or until they reach an internal temperature of 165°F.
  4. Meanwhile, prepare tzatziki by mixing Greek yogurt with grated cucumber, garlic, lemon juice, dill, olive oil, salt, and pepper.
  5. Assemble bowls by layering cooked brown rice, chopped romaine lettuce, diced cucumbers, halved cherry tomatoes, sliced red onion, Kalamata olives, crumbled feta cheese, and cooked meatballs. Drizzle with tzatziki before serving.
