  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water for vegan option)
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup graham cracker crumbs
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups mini vegan marshmallows
  • 1 cup milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix melted butter with brown and granulated sugar until well combined. Add flax egg and vanilla; whisk until smooth.
  3. In another bowl, combine flour, graham cracker crumbs, baking powder, and salt. Gradually add the dry mixture to the wet ingredients and stir until just combined.
  4. Press about two-thirds of the dough into the bottom of the prepared pan. Layer with chocolate chips and sprinkle vegan marshmallows on top. Crumble remaining dough over the marshmallows and press down gently.
  5. Bake for about 25 minutes or until golden brown. Let cool completely before cutting into bars.
